Elke's Coco Truffles - Video

Raw Organic fudge:
2 cups raw cashews, no salt
¼ cup coconut oil
½ cup coco powder
½ cup maple syrup

place cashews in food processor and process for 8-10 minutes until you have a nice shiny cashew butter. This will make about 1 cup cashew butter. Next, stir in the remaining ingredients. Pulse. Finally spread the mixture in an 8x8 pan on top of parchment paper and refrigerate for 2 hours. Cut and serve (chilled). Makes 12 servings.



Raw chocolate Cia Energy Bars
1/3 cup raw unsweetened coco powder
1/3 cup chia seeds
½ tsp vanilla extract
1 cup raw almonds, ground up
1 ½ cups dates (moist ones) If they are too dry, steam them for a few minutes
(1/4 cup cocoa nibs + 3 Tbsp maple syrup – optional)

Puree dates in food processor until thick paste forms.
Add coco powder, chia seeds and vanilla extract. Pulse until combined. Add almonds and pulse until almonds are well distributed.
Press between wax paper, ¼ inch to ½ inch thick. Chill overnight. Cut into bars and dust with cocoa powder to prevent sticking.
Alternately you can from small balls and roll them in coconut shavings.


Quadruple Seed Peanut Butter Coconut Truffles (Dr. Fuhrman)
1 cup (coco) nut milk
12 medjool dates pitted
½ cup smoth natural unsalted peanut butter (organic is best)
½ cup unsweetened cacao powder
½ cup chia seeds
1 tsp vanilla extract
½ cup sesame seeds
½ cup hemp seeds
½ cup raw unsalted sunflower seeds
1 cup chopped unsweetened dried cherries (substitute: dried cranberries)
1 Tbsp fresh orange zest (use an organic orange)
¼ cup coconut flour
Additional coconut flour or ground nuts

In a blender or food processor combine the (coco) nut milk, dates, peanut butter, cocoa powder, vanilla extract and chia seeds. Blend until smooth. Set aside.
In a large bowl combine the remaining ingredients. Stir in the blended date mixture.Mix well. Form truffle sized balls (approx 1 Tbsp)
For a nicer presentation, roll in coco nut flour/shavings/ground nuts or dust with cocoa powder. Makes about 30 bite sized truffles.

This project is labor intensive and messy, but well worth the effort. Double the recipe and freeze. The truffles can satisfy a chocolate craving and are healthy as well. Nicely presented, they make an impressive gift.
