Se conocen 7 variedades en Oaxaca :
Colorado: azúcar, orégano, ajonjolí, ajo, sal, almendras, chiles ancho y pasilla.
Rojo: ajonjolí, cacahuates o maní, nueces, canela, orégano, ajo, jitomate, cebolla, chiles ancho y guajillo.
Manchamanteles: almendras, plátano macho, piña, tomillo, orégano, sal, pimienta ajo, jitomate, chile ancho.
Verde: perejil, epazote, hojasanta, pimienta negra, clavo, ajo, cebolla, chile verde y tomate.
Amarillo: ajo, cebolla, comino, pimienta, tomate verde, hoja santa si acompaña al pollo, cilantro si acompaña carne de cerdo, pitiona si acompaña carne de res, chile costeño, chile ancho, chile guajillo, chilcoxtle.
Chichilo: mejorana, pimienta negra, clavo, jitomate, tomate, chile pasilla, chile chilguacle negro, chile mulato.
Negro con 34 ingredientes: azúcar, sal, chocolate, canela, tomillo, orégano, almendras, nueces, ajonjolí, pan, tortillas, , tomate, jitomate, cacahuates, mejorana, chiles: mulato, pasilla, ancho, guajillo, chilguacle negro, chipotle, cebolla, etc.
