"For desert then we are served up the delights of Balut, one of the most visceral Delicacies dishes to date -- a duck egg that has been fertilized, and allowed to grow into an embryo. The egg is boiled in its shell, and depending on the age of the egg you are either greeted with the delights of an undeveloped embryo not recognisable as s duck. Or one complete with soft bones for you to crunch on. As per usual, the name reflects the track -- an 8 min unsettling, burbling, insistent melody -- one for the brave."
