The Texas International Pop Festival was a music festival held at Lewisville, Texas, on Labor Day weekend, August 30 to September 1, 1969. It occurred two weeks after Woodstock.
Attendance at the festival remains unknown, but is estimated between 120,000 and 150,000
North of the festival site was the campground on Lewisville Lake, where hippie attendees skinny-dipped and bathed. Also on the campground was the free stage, where some bands played after their main stage gig and several bands not playing on the main stage performed. It was on this stage that Wavy Gravy, head of the Hog Farm commune, acquired his name. (At Woodstock, he was Hugh Romney.)
"Polk Salad Annie" is a 1968 song written and performed by Tony Joe White. It was recorded in Muscle Shoals, Alabama. Its lyrics describe the lifestyle of a poor rural Southern girl and her family. Traditionally, the term to describe the type of food highlighted in the song is Polk or poke sallet, a product of pokeweed. Its 1969 single release peaked at Number 8 on the Billboard Hot 100.
Sallet is an old English word that means "cooked greens," and should not be mistaken for "salad"; in fact, a great many cases of Pokeweed poisoning result from this linguistic mistake. While it may be that record companies labeled the song "salad" the dish in question was a sallet.

Many towns in the Southern and Appalachian United States have Polk salad festivals, including the Town of Blanchard, Louisiana. Their annual Poke Salad Festival is held the second Saturday in May each year. The Harriman, Tennessee Polk Salad Festival comes in late May or early June. My hometown of Harlan, Kentucky, celebrates an annual Poke Sallet Festival in early May.
