DESCRIPTION:
This is a Raw Vegan winter soup with mushrooms, corn, avocado, and tomatoes! Super EASY! Yummy, very healthy and packed with antioxidants.
Ingredients
3 white or baby bella
2 medium heirloom tomatoes
1/2 avocado
2-3 cups of boiling HOT water
1 garlic clove
(you can add 1 tablespoon of miso paste) I left this ingredient out this time

Toppings
2 sliced or diced marinated mushrooms (directions below)
1/3- 1/2 cup corn
1/2 avocado
Basil leaves
Optional-Salt and pepper. Garlic powder)

Marinated mushrooms

Toss sliced mushrooms in a bit of olive oil and Tamari
Put in a warm spot in your oven for about 15-20 mins
Ready when soft and darkened
This can be done before you make the soup so its ready to go!
