Simon was bottled in the year 1997. Leftover Butterside Down members: Paul Hutt, Iain Jardine, Norm White and Dave Chisholm, formed Simon after the end of Butterside Down.

Simon was opened with Iain Jardine, Paul Hutt, Mark Organ, and Norm White, in the summer of 2004 with Bright aromas of crushed berry and raspberry, with a hint of mineral. Full-bodied and very round, with lovely velvety tannins and a long finish. Big and boisterous. Almost rustic, but hell, it's a beauty.
